Grapes sampling or the art of determining the date of the harvest

The date is set, at Piot-Sevillano, the harvest will start on septembre 6th!

But how do we determine the date of the harvest ?

The date of the harvest is before all based on the maturity of the grapes. There for, starting a certain time, we regularly sample the grapes from our different plots in order to mesure the balance between acidity & alcohol potential. This step is mandatory and enable us to not only determine the date of the harvest, but also the order of plots' picking. Of course, to determine this date, we also need to take into account the sanitary states of the grappes, the weather, the style of wine wanted, and the domain organisation.
